    Heat a bit of coconut milk in a pot and stir in the curry paste until fragrant.

    Add the rest of the coconut milk and bring to a gentle simmer.

    Add protein (chicken or tofu) and cook until tender.

    Stir in bamboo shoots and simmer for 5 more minutes.
